Betty Fuller’s Pickled Eggs

This is another treasured recipe from my Grandma Fuller….Our family seems to be split on this one…some can’t get enough and some can’t figure out how we can eat such a thing! I personally LOVE them. Grandma makes these for us every time she visits. Enjoy!

Grandma Betty’s Pickled Eggs

2 C vinegar
1 1/2 C sugar
1 tsp cloves (ground)
2 C of beets with juice
2 dozen eggs (boiled with shells removed)

Place boiled eggs in a extra large wide mouth jar, preferrably a gallon size jar. Pour the pickling mixture on top of the boiled eggs and add the beets. Allow this mixture to sit in the refrigerator at least one and half or two days before taste testing. The pickled eggs will have a better taste with more time in the spices! Enjoy
