Jane’s Vegetable Beef Soup

This is another recipe I remember of moms. She always used bay leaves in recipes; I remember seeing them in the cooking pot and learning from her they had to be removed before the meal. So when I read bay leaves in this recipe I had to smile at the memory.

Jane’s Vegetable Beef Soup

2 to 3 lbs of beef stew meat (with bone)
2 C can tomatoes
1 Tbsp salt
1 C potatoes
1 C celery (diced)
6 C water
1 large onion (chopped)
2 bay leaves
1 C carrots (sliced)
1 C cabbage (chopped)

Brown meat in hot oil, drain any excess oil and add water, tomatoes, onion and seasonings. Cover and let simmer for two hours, remove bones. Add vegetables, cover and simmer for one hour longer. Remove bay leaves before serving.
